Butternut Squash Watery
Watery roasted butternut squash was either overcrowded on the pan or not dried before roasting — here's how to fix it and get caramelized, concentrated squash.

The fix

- 1 Spread squash pieces in a single layer on a clean baking sheet with at least 1 inch of space between pieces — spread across two sheets if needed
- 2 Roast at 425°F without moving for 15 minutes, then flip once — leaving them undisturbed allows steam to escape and caramelization to develop
- 3 If already soggy, spread pieces on a dry sheet and roast for an additional 10 minutes at 450°F to evaporate excess moisture
- 4 Drizzle with 1 teaspoon maple syrup in the last 3 minutes of roasting to lacquer and concentrate the flavor
If it's still wrong
- Microwave watery squash pieces for 3–4 minutes without cover — this drives off steam rapidly before finishing in the oven.
- Puree watery squash with a bit of butter and simmer in a saucepan until thickened — the extra moisture becomes an asset in a smooth soup or sauce.
Prevent next time
- Pat squash pieces dry with paper towels after cutting and before oiling — removing surface moisture gives the roasting process a head start.
- Use a sheet pan large enough so pieces have room to breathe; a 9x13 pan is too small for a whole butternut squash.
