Why this works

Cheesecake and custard desserts are protein gels. Egg proteins denature and cross-link starting around 160F, forming a smooth network that traps moisture. Above 185F, the proteins over-cross-link and contract, squeezing out water and physically shrinking the surface, which tears it apart. Rapid cooling exacerbates this because the exterior contracts from thermal shrinkage while the interior is still expanded, creating tension. The sour cream fix works because it is opaque, sets firm when chilled, and the tang of the sour cream actually enhances the flavor profile. This is the same technique used by professional bakeries, and it is far easier than trying to prevent cracks in a home oven.
