Crepes Tearing
Your crepes tear because the batter is too thin or the pan is too dry. Add flour and more fat to strengthen them.

The fix

- 1 whisk in 1 tablespoon flour to thicken the batter
- 2 rest the batter 10 minutes so the flour hydrates
- 3 grease the pan lightly with butter before each crepe

- measure liquid carefully and avoid over-thinning
- use a nonstick pan and a thin spatula

Why this works
