Food Sticking to the Pan
Food sticks when the pan or oil is not properly heated, the surface is wet, or you try to turn it before a crust forms. These fixes work with stainless steel, cast iron, and nonstick pans.

- 1 lower the heat slightly and wait 30 to 60 seconds; browned food often releases naturally once its crust is set
- 2 slide a thin spatula under the food from several angles instead of pulling it straight up
- 3 if the food tears, remove it and deglaze the browned bits with 2 tablespoons water or stock for a quick pan sauce
If it's still wrong
- Add 1 teaspoon oil around the food's edges, wait 20 seconds, and try the spatula again.
- Stop forcing delicate food if it is breaking; deglaze after serving and spoon the flavorful browned bits over it.

- Pat food dry, preheat stainless steel or cast iron, then add oil before the food.
- Use moderate heat with nonstick cookware, add a small amount of fat, and avoid damaged nonstick surfaces.

Preheat stainless steel and cast iron before adding oil and food. For nonstick cookware, follow the manufacturer’s heating guidance and avoid very high heat. With any pan, dry the food, leave space between pieces, and let a crust develop before trying to turn it.
