Fruit Compote Too Runny

  • fruit compote
  • cornstarch
  • lemon juice
  • saucepan
  • sugar

Why it happened

Fruit contains a lot of water. Reduction concentrates the sugars and a small amount of starch sets the liquid.

The fix

Save
  1. 1 simmer uncovered for 5 minutes to reduce
  2. 2 whisk in 1 teaspoon cornstarch mixed with 1 tablespoon cold water
  3. 3 add a squeeze of lemon to brighten and thicken perception

If it's still wrong

  • Chill; it will thicken slightly as it cools.
  • Use as a syrup over pancakes or yogurt.

Prevent next time

  • Cook longer over low heat for gradual reduction.
  • Start with less added water.
