Fruit Compote Too Runny

- fruit compote
- cornstarch
- lemon juice

Why it happened
Fruit contains a lot of water. Reduction concentrates the sugars and a small amount of starch sets the liquid.
The fix
- 1 simmer uncovered for 5 minutes to reduce
- 2 whisk in 1 teaspoon cornstarch mixed with 1 tablespoon cold water
- 3 add a squeeze of lemon to brighten and thicken perception
If it's still wrong
- Chill; it will thicken slightly as it cools.
- Use as a syrup over pancakes or yogurt.
Prevent next time
- Cook longer over low heat for gradual reduction.
- Start with less added water.
