Gravy Too Salty

  • salty gravy
  • unsalted stock
  • butter
  • flour
  • cream

Why it happened

Salt cannot be removed, only diluted. Extra liquid and fat reduce concentration and soften perception.

The fix

Save
  1. 1 whisk in 1/2 cup unsalted stock and simmer 2 minutes
  2. 2 add 1 tablespoon butter to soften the taste
  3. 3 if still salty, whisk in a small flour slurry to increase volume

If it's still wrong

  • Serve over unsalted potatoes or rice.
  • Add a pinch of sugar to blunt salt perception.

  • Use low-sodium stock and season at the end.
