Why it happened
Cool oil soaks into potatoes instead of crisping them. High heat drives off oil and moisture.
The fix
- 1 spread in a hot dry skillet to re-crisp for 2 minutes
- 2 drain on paper towels to remove surface oil
- 3 season with salt after crisping

- turn into a hash with eggs and vegetables
- bake at 425F for 5 minutes to dry further

- dry potatoes thoroughly before frying
