Home Fries Greasy

  • oil

Why it happened

Cool oil soaks into potatoes instead of crisping them. High heat drives off oil and moisture.

The fix

Save
  1. 1 spread in a hot dry skillet to re-crisp for 2 minutes
  2. 2 drain on paper towels to remove surface oil
  3. 3 season with salt after crisping

If it's still wrong

  • turn into a hash with eggs and vegetables
  • bake at 425F for 5 minutes to dry further

Prevent next time

  • dry potatoes thoroughly before frying
  • use a hot pan and avoid crowding
