Mayonnaise Too Thick

Your mayonnaise is too thick and stiff. Loosen it with a small amount of water or acid.

Part of sauces cooking fixes .

stiff texture hard to spread vegetarian gluten-free

Ingredients on hand

  • thick mayonnaise
  • warm water
  • lemon juice
  • whisk
  • salt

Why it happened

Mayonnaise thickens as oil droplets pack tightly. A little liquid expands the emulsion and makes it spreadable.

The fix

Save
  1. 1 whisk in 1 teaspoon warm water to loosen
  2. 2 add a splash of lemon juice for brightness
  3. 3 taste and adjust salt

If it's still wrong

  • use as a sandwich spread
  • thin with yogurt for a dressing

Prevent next time

  • stop adding oil once the mayo is thick
  • thin gradually with water while whisking

Notes

Why this works

A small amount of liquid loosens the emulsion without breaking it. The result is a smoother, more spreadable mayo.

Substitutions

  • lemon juice vinegar
  • warm water milk
