Meat Not Browning
Meat stays gray when its surface is wet, the pan is crowded, or the heat is too low. Dry it, cook smaller batches, and leave it undisturbed long enough to sear.

The fix

- 1 remove the meat from the pan, pour off excess liquid, and pat the pieces dry
- 2 heat a thin film of oil in the pan over medium-high heat, then return only enough meat for one uncrowded layer
- 3 leave the meat undisturbed until a brown crust forms and it releases easily, then turn it
If it's still wrong
- Brown the remaining sides in smaller batches and combine everything only after the searing is complete.
- If the meat is already cooked through, make a pan sauce from the juices instead of continuing until it dries out.
Prevent next time
- Pat meat thoroughly dry and preheat a heavy pan before adding it.
- Leave space between pieces, use multiple batches, and do not move the meat before its crust sets.
Notes
Remove moisture before adding more heat
Turning up the burner will not help while meat is sitting in a pool of liquid. Remove the meat, discard or reserve that liquid, and restart with a dry, hot pan. Stop searing meat that is already at its safe target temperature; use the collected juices for sauce instead.
