Pilaf Too Dry

Your pilaf is dry because it absorbed too much liquid or reduced too far. Rehydrate with warm stock and fat.

dry texture · crumbly grains · vegetarian

The fix

Tap a step to check it off.

  1. 1 sprinkle 1/4 cup warm stock over the pilaf
  2. 2 cover and steam on low heat for 4 minutes
  3. 3 stir in 1 tablespoon butter and herbs

If it's still wrong

  • Serve with a saucy protein to add moisture.
  • Turn into a pilaf cake and pan-sear.

Prevent next time

  • Use a tight lid and remove from heat as soon as liquid is absorbed.
  • Let it rest covered for 10 minutes before fluffing.

Notes

Why this works

A short steam adds moisture back into the grains. Butter coats the rice so it feels tender instead of dry.
