Potatoes Not Crispy
Potatoes stay soft when their surfaces are wet, the pan is crowded, or the oven is too cool. Dry them, spread them out, and finish at high heat.

The fix

- 2 toss with just enough oil to coat, then roast at 450F for 8 to 12 minutes
- 3 turn once when the undersides are deeply golden, then salt immediately before serving
If it's still wrong
- Move the potatoes under the broiler for 1 to 2 minutes, watching continuously to prevent burning.
- Pan-fry small batches in a thin layer of oil over medium-high heat until crisp on both sides.

Wet potatoes packed closely together steam one another. Use a large pan or two smaller pans, keep the pieces in a single layer, and wait for real browning before turning them.
