Ramen Noodles Clumped

Ingredients on hand
- cooked noodles
- hot water
- sesame oil
- colander
- scallions
Why it happened
Starch on the noodle surface glues them together as they cool. Heat and oil separate the strands.
The fix
- 1 rinse briefly with hot water to loosen the starch
- 2 toss with 1 teaspoon sesame oil
- 3 reheat in broth just before serving
If it's still wrong
- pan-fry into a noodle cake
- serve in a stir-fry where clumps are less noticeable
Prevent next time
- stir while boiling and drain promptly
- toss with a little oil if holding
