Ramen Noodles Clumped

  • cooked noodles
  • hot water
  • sesame oil
  • colander
  • scallions

Why it happened

Starch on the noodle surface glues them together as they cool. Heat and oil separate the strands.

The fix

Save
  1. 1 rinse briefly with hot water to loosen the starch
  2. 2 toss with 1 teaspoon sesame oil
  3. 3 reheat in broth just before serving

If it's still wrong

  • pan-fry into a noodle cake
  • serve in a stir-fry where clumps are less noticeable

Prevent next time

  • stir while boiling and drain promptly
  • toss with a little oil if holding
