Burnt Roasted Vegetables
Your roasted vegetables have burnt edges from too much heat or sugar. Trim and balance the bitterness.
burnt edges · bitter flavor · vegan · gluten-free
The fix
Tap a step to check it off.
- 1 trim off the charred edges and discard
- 2 toss with 1 tablespoon olive oil and a squeeze of lemon to soften bitterness
- 3 add fresh herbs or toasted nuts to distract from the remaining bitterness
If it's still wrong
- Chop and fold into a grain salad with a tangy dressing.
- Puree into a soup where bitterness is less noticeable.
Prevent next time
- Roast at 425F and check a few minutes early.
- Cut vegetables evenly so they cook at the same rate.
Notes
Why this works
Burnt flavors are concentrated on the surface, so trimming removes most of the bitterness. Fat and acid balance what remains and make the vegetables taste fresher.
