Vinaigrette Too Acidic
Your vinaigrette tastes sharp because the acid is too high. Add oil and a touch of sweetness.

sharp taste sour finish vegetarian gluten-free
Ingredients on hand
- vinaigrette
- olive oil
- honey
- mustard
- salt
Why it happened
Acid dominates without enough fat. Oil and a little sweetness balance the flavor and soften the bite.
The fix
- 1 whisk in 2 tablespoons olive oil
- 2 add 1/2 teaspoon honey to round the acid
- 3 add a pinch of salt and whisk smooth
If it's still wrong
- use on hearty greens like kale
- dilute with a spoon of yogurt
Prevent next time
- start with a 3:1 oil to vinegar ratio
- taste before adding more acid
Notes
Why this works
Oil coats the palate and reduces the sharpness of vinegar. A small amount of sweetness further softens acidity.
Substitutions
- honey → maple syrup
- olive oil → neutral oil
